D/L ENGLISH TOFFEE

The most delicious English Toffee in the entire world is also one of the most simple recipes ever.  I learned how to make this taste treat while working in the Candy Palace at Disneyland way back in the early 70's.  Here goes:

2 Large Hershey Bars

1 Cup Almonds

2 Sticks Butter

1 Cup Sugar

Chop the Hershey Bars in a Cuisinart.  Also chop the Almonds in a Cuisinart.  Combine the two in a large mixing bowl.  Spread 1/2 of the mixture on a cookie sheet, and hold the other 1/2 back until later.

In a large saucepan, melt the butter and add sugar over medium-high heat.  Stir continually with a wooden spoon.  You'll know when it's ready when the edges begin to smoke and the batch turns golden brown.    NOTE:  This is super hot, so be careful not to spill it on yourself or your dog.

Pour and spread the heated blend over the chocolate / almond on the cookie sheet.  While still hot, pour the remaining chocolate / almond on top.

I like to leave the candy on the counter for about 20 minutes to make sure all chocolate has melted and adhered to the blend. Then, I put it in the fridge for about an hour to harden.  Once hardened, you have the option of creating bite-sized chunks of English Toffee or larger pieces.

When eating, remember the ingredients are chocolate, butter, sugar, and almonds, so it's not fit for most weight loss programs. On the other hand, what's not to be delicious out of those ingredients, even if it's over-cooked or under-cooked just a little. Deee-lish!!!
